About
Stephan Asseo has been a dedicated vigneron and artisan winemaker for nearly two decades. His unique style and level of quality garners acclaim and accolades from the European press, travel guides, the Wine Advocate and the Wine Spectator. In 1996, Stephan left France in search of a terroir where he could consistently achieve full maturity in his fruit and be unfettered as an innovator. Stephan's "adventure" led him all over the world in search of a great wine field, until he finally "fell in love" with Paso Robles. He has become known for his renegade Cabernet Sauvignon and Syrah blends, like the Optimus and the Estate Cuvee.

45% Syrah, 40% Cabernet Sauvignon, 15 % Petit Verdot 60% grapes from L'Aventure estate vineyard and 40% from Paso Robles west side vineyards. Very low yield: 2 to 2.5 tons per acre. 90% new French oak and 10% 1 year old French oak with malolactic fermentation in barrel. Length of aging: 14 months

"The sexiest offering at present is the 2007 Optimus Proprietary red, a blend of 45% Syrah, 40% Cabernet Sauvignon, and 15% Petit Verdot. More fruit-forward than the 2006, the 2007 gushes with blackberry and cassis fruit, smoky, burning embers, charcoal, and toasty new oak. Full-bodied and powerful with supple tannins, decent acids, and an overall impression of voluptuousness as well as extravagant fruit and opulence, it should drink beautifully for a decade. $45"
