About
The pinnacle of single-vineyard California Pinot Noir bottlings exists here, at Capiaux Cellars. Winemaking is led by Sean Capiaux, who founded the winery in 1994. True Burgundian tradition and style takes the forefront, the goal being to truely express the unique terroir from which they came and to have the inherent flavors of the grape and land be the leading attributes rather than new oak, unnatural additives, and influences. Winemaking techniques include natural fermentation, limited amounts of new oak, the rare addition of any acid, nitrogen, or other nutrients, as well as bottling the wine unfined & unfiltered.
Sean Capiaux has an established and notable career at prominent wineries around the world which include: Jordan, Pine Ridge, and Peter Michael in California; Macari, Jamesport and Schneider in Long Island, NY; and Houghton's in Australia. In 1994 Sean launched his own label, Capiaux Cellars, and he presently works as winemaker for O'Shaughnessy winery in the Howell Mountain appellation of Napa Valley.

"Another intriguing offering is the 2009 Pinot Noir Chimera. Most Burgundy varietals did well in 2009 because it was such a perfumed vintage given the cooler temperatures. The lacy, elegant Chimera possesses a fragrant bouquet of spring flowers intermixed with red and blue fruits as well as mossy underbrush characteristics, a round, generous mouthfeel and sweet, silky tannins. Already delicious as well as complex, it can be enjoyed over the next 2-3 years. Sean Capiaux, who is also the winemaker for O'Shaughnessy's Napa Valley wines, has his own project and as the following tasting notes indicate, he demonstrates a Midas touch with Pinot Noir. His 2007 and 2008 Pinots I reviewed in issue 187 were also impressive. $35"
